I cook weird food for dinner.

Remember the burger melt? I made it’s little sister, the fried cheese melt for dinner on Friday. Jake sent me a link to this new dish at denny’s asking me to make it for him. So of course I did! I wifed it up on Friday night! Here is how I did it!

Cut string cheese in half, then dip in egg and then in bread crumbs. repeat and repeat to make it a nice, thick, crispy crunch. Then fry them.

Then put inbetween two slabs of buttered bread with lots of sliced cheddar cheese and pan fry until golden brown. (and then don’t judge the girl who calls herself “a hairstylist” for her awful hair in these pictures)

Then serve with something at least kind of healthy, so that you don’t die. I invented my own little tomato and basil soup recipe for the dipping. (and don’t judge the girl who claims to have been “wifing it” for the soup all up the side of the bowl”

This was another one of those, fun to try, but I am not going to seriously make this meal regularly or probably ever again. I only ate half of my sandwich, and then proceeded to devour my tom/bas soup. I’m not much of a cook at all. But I can kind of bake and I can seriously nail making weird food, the kind that doesn’t even count as a meal. Like above. Cool right?

My soup was quick and easy, but I’ll do it again. I will probably spend more time on it, the focus for this meal was the sandwich, so next time I’ll probably add more to the soup.

Throw a finely chopped garlic clove into a big sauce pan with some olive oil and let simmer for about a minute.

Throw in a container of Pacific brand organic creamy tomato soup.

Throw in a can or two of diced tomatoes

Throw in a splash of heavy cream. (just a splash)

Throw in a few handfuls of sliced basil

Throw in an immersion blender and blend everything nice and smooth.

Make sure you throw everything in since then you have the excuse that “What? This old meal? I just threw it all together!”.

    Don’t kid yourself, girl … that’s cooking. And you look great wifing it up.

    BTW want to know the best tomato soup of all? Make a few cups of medium-thick bechamel (white sauce) from milk, flour, and butter. Add pureed stewed tomatoes. That’s it. Heat and season. Tastes so fresh, you won’t believe it.

    We like it with homemade croutons … day-old bread cubed and tossed with melted butter and creole seasoning, then crisped brown on a cookie sheet in the oven.

    Perfect for those crisp autumn afternoons that are on their way, YAY!

    I love, love your blog. I rarely have time to look at blogs, so I don’t really follow any. However, I stumbled upon cjane through a friend’s blog – and saw your guest post. I spent like 2 hours looking at all your posts and all the gorg pics of you and your amazing little girl. And, I cried a river. It’s probably weird to admit this, but I would love to meet your Piper? I want to give her a big hug and a kiss. Not that she does’t get enough hugs and kisses, I’m sure, but I seriously think the world of her. She’s a real doll!

    Have you ever tried gaspacho? A bit similar to your soup, but it’s cold and easier to prepare, I think, because everything is raw. It’s very nice in summer.

    For meatless Monday tonight I was inspired by you! I had my Trader Joe’s Organic tomato and roasted red pepper soup to which I added the following after a run through the blender: a can of rotel (tomatoes with chiles), garlic, oil packed sun dried tomatoes, and roasted yellow peppers. It was so good! It was quite spicy from the Rotel so next time I would probably just use regular canned tomatoes, but it was tasty – with fresh basil garnish from my yard. My husband devoured it, my kids loved it even though spicy. All with grilled cheese of course.
